Avocado & Goat-Cheese Spread
Grate the rind of the lime, then cut the lime in half and squeeze out the juice from both halves. Strain into food processor. Add grated lime peel, cheese, olive oil, curry paste, and pinch of salt, then process until smooth. Transfer to bowl. Scoop the pulp of the avocado, add to cheese mixture small bowl and mash well. Tasted and correct seasonings. Refrigerate until ready to serve. Serve with crackers, crostini or slices of a fresh rustic bread.
